Marcia Louchheim’s Challah
4 cups flour
1 ½ tsp salt
1/3 cup sugar
¼ cup oil (any vegetable or light olive oil) or butter
1 envelope rapid rise yeast
1 cup warm water with ½ tsp sugar
2 eggs beaten
Mix yeast in sugared water (make sure the yeast starts to bubble)
Put dry ingredients in mixing bowl (I include dried cranberries or chocolate chips)
Slowly pour in yeast mixture
Add oil or butter
Using a dough hook or by hand, knead dough until it has a smooth elastic texture.
Place dough in an oiled bowl and cover the dough, let it rise until double in size.
Punch dough down and form dough into loaves.
Place dough on baking sheets, cover and let rise until doubled in size.
When the dough is ready to be shaped into loaves, say the following blessing: Baruch Ata A-Do-Nay Elo-haynu Melech HaOlam Asher Kidishanu B’Mitzvotav V’Tziyvanu L’Hafrish Challah. (Blessed are You, Lord our G-d, King of the Universe, Who has sanctified us with His commandments and commanded us to separate Challah)
Make an egg wash with 1 egg beaten with water and brush egg wash on Challah
Bake at 350 for 45-50 minutes until golden brown.
